Valentine’s Four Course Meal

First Course: Crab Cakes

Paired with MacRostie Sonoma Coast Chardonnay

Take Crab Cakes out of container and move to oven safe container or place in air fryer.

Heat Crab Cakes at 375F for 12-15 minutes.

Plating: Dress arugula with lemon thyme vinaigrette to be served on the side with crab cakes. Spread creole remoulade on the plate. Place heated crab cake on top of creole remoulade. If desired, garnish with fresh lemon or dill.

Second Course: Wedge Salad

Paired with Domaine Drouhin Dundee Hills Pinot Noir

-Place one wedge on a plate. Drizzle with raspberry vinaigrette, then drizzle with blue cheese dressing. Garnish salad with bacon, blistered tomatoes, and crumbled blue cheese.

Third Course:

Paired with Textbook Paso Robles Cabernet Sauvignon

Bacon Wrapped Asparagus - Preheat the oven to 350 degrees. Uncover container and heat in oven for 20-25 minutes.

Filet Mignon - Preheat oven to 350 degrees. Allow steaks to come to room temperature by setting out for 20-30 minutes before cooking.

*Please note that all ovens are different. We suggest the best way to monitor steaks is by using thermometer to reach your desired temperature listed below to avoid over cooking steaks. View below for some alternative ways suggested by our Chef to heat steak if desired*

-Uncover container and heat in oven at 350 degrees to desired temperature:

Rare: 4-5 minutes, internal temperature of 115 degrees

Medium Rare: 6-7 minutes, internal temperature of 125 degrees

Medium: 7-8 minutes, internal temperature of 135 degrees

Medium Well: 9-10 minutes, internal temperature of 145 degrees

Well Done: 10-11 minutes, internal temperature of 155 degrees

Third Course Continued:

Charred Scallion Whipped Potatoes: Loosen lid on container to vent the potatoes. Place in the microwave and cook for 2 minutes. Stir, and cook for an additional 2 minutes to heat through. Allow potatoes to sit 1 minute before serving.

Plating: Place scoop of the mashed potatoes just off center of a dinner plate. Lightly place filet on top of potatoes. Top steak with truffle butter. The heat of the steak will allow the butter to melt into the meat and onto the potatoes. Place bacon wrapped asparagus to the side of the filet and potatoes.

Fourth Course: Chocolate Torte and Lemon Mascarpone Cake

Paired with Francois Montand Brut Rosé



Alternative Ways and Tips to Cook Filet Mignon:

Oven for Rare Temperature:

Preheat oven to 250 degrees. Low heat is key to not overcooking or drying out the steak. Placing steaks on a wire rack will help heat to circulate around the entire steak. If using the oven safe container it came in, make sure to remove plastic lid before heating.

Allow steaks to come to room temperature (sit on the counter for 20-30 minutes before cooking).

Heat the steak in the oven at 250 degrees for about 20 minutes. Place the steak in the oven for about 20 to 30 minutes, or until thermometer reaches an internal temperature of 110 degrees. Keep in mind that the time needed to reheat will depend on the thickness of your cut of steak.

Finally, to recreate the crispy, crunchy crust, heat some oil in a hot pan and quickly sear the steak for 1 to 2 minutes per side.

Airfryer:

Preheat the air fryer to 350 degrees. Add the steak to the air fryer basket. Air fry for up to 5 minutes. Allow the steak to cook for three to five minutes depending on the size of the cut of meat and add a minute or two for particularly thick pieces.
